This recipe holds a special place in my heart; this was something my grandmother use to make all the time during the holidays. Unfortunately I didn’t have the original recipe so I had to make up what I remembered it tasted like. This is a home run kind of treat, you bite into a gooey chocolate mess of health bar bites with toasted walnuts then you get to the short bread crust that is buttery and oh so good, it crumbles right in your mouth. A winner in my book and hopefully it would be in your book too.
English Toffee Shortbread Bars
½ CUP BUTTER, COLD
¼ TEASPOON SALT
1-CUP BROWN SUGAR
1 CUP CHOPPED WALNUT
½ CUP TOFFEE BITES
2 CUPS CHOCOLATE CHIPS (12 oz bag)
Start by lining a 9X13 pan with parchment paper and set aside. Place flour, brown sugar and salt in a large mixing bowl, stir until combine. You can use a pastry blender or a normal blender should work just fine to cut ½ cup cold butter into flour mixture until you have course sand like crumbs (be careful and blend in short increments.) Press mixture into the bottom of a 9X13 prepared pan, spread evenly. Bake at 350 degrees for 20-22 minutes or until edges are starting to bubble. Remove from oven and sprinkle the chocolate chips over the top of the hot shortbread. The heat should start the melting process of the chocolate chips, then use a butter knife to help evenly smear all over. Pour the chopped walnuts and toffee bites all around and press down to help it stick. Let cool completely, 30 minutes to an hour. Use the parchment paper to lift bull bar out of pan and transfer to a cutting board. Cut bars as desired and then store in a airtight container. ENJOY!
